If you're Fergus Henderson, then you can talk about "nose to tail eating", using every single scrap of offal, skin and gristle, and people will nod sagely and agree with you that this is a truer, more authentic way to eat meat, and that in many ways it is a deeply respectful way to honour the dead animal by wasting not a scrap.
If you're Gregg's The Bakers? I would guess not.

I've never really understood this attitude that certain native peoples were nobler than modern society because they used every part of the animals they killed. The modern abbatoir is probably the most efficient processor of slaughtered livestock that has ever existed. Their main waste products are odours and contaminated waste water from washing of work areas.
ReplyDeleteIt seems like such a comparitively minor peeve when people compain about throwing out chicken bones and port fat. Unfortunately, I don't think 'efficient meat processing' and 'noble' are compatible terms in the 21st century lexicon.
Actually, does this attitude even make any sense at all? If someone told me they were going to kill me and leave my carcass to rot, I'd probably be pretty upset, but I doubt I'd be mollified in any way if he told me he was going to eat what he could and use the inedible parts of me for various handicrafts. I certainly wouldn't be thinking, "well at least he's shown me that respect".
ReplyDeleteNot knowing the mind of a cow, this is pure speculation, but if you were able to ask their opinion, I can't imagine they'd look at it differently.
